I want to make signs for the school and teachers as needed. I am curious if anyone knows or could tell me what is the trade name of this plastic and where I might be able to find it online (see pic). Its about 3/16 thick or so and green on the front and white on the back and I assume we could just route throught the green for whatever text or signage we want.

It is colorcore. I used it when I was in a sign shop years ago. We buy PVC from Piedmont Plastics and they have it. Check it out.

colorcore is made by King plastics you can go to their website and look for distributors in your area. I have been messing around with it myself it is very easy to work with. They also make a product called Starboard St(structural) which is great for building cabinets for outdoor kitchens.
